Dad’s Summer Grill Marinade
Inspired by our favourite backyard cooks — tangy, garlicky and made for summer.

Ingredients
- ½ cup plain Greek yogurt
- 2 tbsp olive oil or neutral oil
- 1 tbsp apple cider vinegar
- 1 tbsp fresh lime juice
- 1–2 tsp vinegar-based hot sauce
- 2 tsp chili powder
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp seasoning salt
- ½ tsp kosher salt
- ¼ tsp freshly ground black pepper
- 1 kg / 2 lb boneless chicken thighs or chicken breasts
Instructions
- 1Whisk the yogurt, oil, vinegar, lime juice, hot sauce, and seasonings together until smooth.
- 2Add the chicken and coat thoroughly.
- 3Cover and refrigerate for at least 4 hours, ideally overnight.
- 4Heat the grill to medium-high.
- 5Remove the chicken and scrape off heavy excess marinade so it does not scorch.
- 6Grill until browned and cooked through to 74°C / 165°F internally.
- 7Rest for 5 minutes before serving.
Family story
This marinade borrows a little from several family grilling traditions: yogurt-and-seasoning chicken left overnight, a salty-garlicky steak rub, and Dad’s classic oil-and-vinegar marinade.
This version brings a little of each together — tangy, savoury, garlicky, with a splash of heat, and made for summer dinners outside.
Personal note
Make more than you think you need. Cold leftovers are excellent in wraps, salads, or sandwiches the next day.
